Ingredients:
  • 200.00 gm cooked brown basmati rice
  • 40.00 gm sun-dried tomato pesto
  • 62.50 ml semi-dried tomatoes, chopped
  • 1.2kg single turkey breast fillet (see note)
Instructions:
  • Preheat your oven to 190°C/170°C fan-forced, then mix together rice, pesto, and tomato in a bowl.
  • Lay the turkey, skin-side down, on a flat surface. Spread the stuffing over the turkey. Roll it up to seal in the filling and tie with kitchen string every 3cm. Put the turkey, seam-side down, on a wire rack in a large roasting pan. Brush with oil, season with salt and pepper, and pour 2 cups of boiling water into the pan to cover the base.
  • Roast the turkey in the oven for a total of 1 hour and 10 minutes, adding water to the pan if needed. Cover with foil for the last 30-35 minutes until fully cooked. Rest for 10 minutes, then slice and serve.
