Roast vegetable and tuna salad

Ingredients:
  • olive oil cooking spray
  • 2 red onions, cut into thick wedges
  • 1 large yellow capsicum, sliced
  • 1 large red capsicum, sliced
  • 700g tomato
  • 150g marinated artichokes, drained
  • 100g pitted black olives
  • 425g can tuna in oil, drained, flaked
  • 18.20 gm extra virgin olive oil
  • grilled ciabatta bread, to serve
Instructions:
  • Preheat your oven to 220°C.
  • In a large baking dish, combine onions, capsicums, and tomatoes. Drizzle with oil to evenly coat. Roast in the oven, turning occasionally, for 30 minutes.
  • Place artichokes and olives in the baking dish and continue roasting for 5 more minutes.
  • Place a colorful array of vegetables alongside the flavorful tuna on individual serving plates. Generously drizzle the dish with high-quality oil. Enjoy with freshly baked bread on the side.
