Roast vegetable couscous

Savory roast veggie couscous pairs perfectly with juicy grilled steak.
Ingredients:
  • 1 red capsicum, halved, deseeded, thinly sliced
  • 1 green zucchini, halved crossways, cut lengthways into thin strips
  • 1 brown onion, halved, cut into wedges
  • 190g (1 cup) couscous
  • 435ml (1 3/4 cups) boiling water
  • 40.00 ml fresh continental parsley leaves
  • Salt
Instructions:
  • Preheat the oven to 220°C. Line a large baking tray with non-stick baking paper. Spread capsicum, zucchini, and onion on the tray. Drizzle with oil and toss to coat evenly. Bake on the top shelf for 20 minutes or until golden brown.
  • In a heatproof bowl, combine couscous and boiling water while stirring with a fork. Cover and let sit for 5 minutes until liquid is absorbed. Fluff couscous with a fork, then mix in the capsicum and parsley. Season with salt to taste and serve hot.
