Roast vegetables with sage butter

Coat roasted vegetables in fragrant sage-infused butter until crisp and golden.
Ingredients:
  • 1 bunch baby carrots, trimmed
  • 4 purple carrots, trimmed, quartered lengthways
  • 4 parsnips, trimmed, quartered lengthways
  • 2 small orange sweet potatoes (kumara), cut into wedges
  • 12 baby chat potatoes, halved
  • 8 brown pickling onions, halved
  • 100g butter, cut into 1cm pieces
  • 30.00 ml rosemary leaves
  • 1 bunch sage, leaves picked
Instructions:
  • Preheat your oven to 200C and prepare 2 baking trays by lining them with baking paper.
  • Spread the vegetables evenly on baking trays. Sprinkle with butter, rosemary, and sage. Season with salt and pepper. Roast for 50 minutes or until golden brown, turning occasionally.
