Roasted beets: versatile addition to any dish.
Ingredients:
  • 2 lb beets, scrubbed clean, green tops removed
  • 2 tablespoons olive oil
  • 1 tablespoon salt
Instructions:
  • Preheat oven to 400°F. Line a roasting pan with foil. Arrange beets in the pan and drizzle with oil. Sprinkle with salt, then cover tightly with another sheet of foil.
  • Roast until beets are fork-tender, about 1 hour. Extend roasting time by 30 to 60 minutes if needed. Allow to cool for 15 minutes before serving.
  • Wearing gloves, peel the outer skins off the beets and then slice or quarter them.
