Butternut squash lasagna with creamy roasted squash sauce, spinach, and three cheeses.
Ingredients:
  • 1 butternut squash - peeled, seeded, and cubed
  • 1 tablespoon olive oil, or to taste
  • 1 tablespoon chopped garlic
  • 3 dashes ground sage
  • 1 pinch seasoned salt (such as The Chef's Miracle Blend®), or to taste
  • 0.25 cup butter
  • 2 teaspoons chopped garlic
  • 0.25 cup all-purpose flour
  • 3 cups milk
  • 1 pinch salt and ground black pepper to taste
  • 1 teaspoon chili powder
  • 0.5 teaspoon dried rosemary
  • 1 (16 ounce) container ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 (10 ounce) package frozen chopped spinach, drained and squeezed dry
  • 1 egg
  • 0.25 cup grated Parmesan cheese
  • 9 no-boil lasagna noodles
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Coat butternut squash in a 9x11-inch baking dish with olive oil, 1 tablespoon garlic, ground sage, and seasoned salt by tossing everything together.
  • Roast the butternut squash in the preheated oven, ensuring to stir every 20 minutes, until tender, for about 1 hour.
  • Lower the oven temperature to 375 degrees F (190 degrees C).
  • In a large saucepan over medium heat, melt butter. Add garlic and cook until fragrant, about 1 minute. Whisk in flour to form a smooth paste. Gradually pour in milk, then season with salt and pepper. Cook and stir until sauce is thick and bubbling, 8 to 10 minutes.
  • Take the sauce off the heat and mix in roasted butternut squash, chili powder, ground sage, and rosemary. Use an immersion blender to puree the sauce until smooth.
  • Combine ricotta cheese, 1 1/2 cups mozzarella cheese, spinach, egg, and Parmesan cheese in a bowl.
  • Begin by generously coating the bottom of the baking dish with 1/2 cup of irresistible sauce. Layer 3 lasagna noodles on top of the sauce. Gently spread 1/3 of the delectable ricotta cheese mixture over the noodles. Repeat these layers two more times, finishing with the remaining sauce. Finally, sprinkle the remaining 1/2 cup of tantalizing mozzarella cheese on top. Cover the dish with foil to lock in all the mouthwatering flavors.
  • Bake in the preheated oven for 40 minutes until the mozzarella cheese is melted. Uncover and bake for an additional 10 minutes until bubbly.
