Sweet citrus roasted carrots with vibrant fennel fronds make a delightful side dish!
Ingredients:
  • 1 pound carrots, peeled and cut into 3-inch pieces
  • 1 sweet onion, roughly chopped
  • 0.25 cup honey
  • 2 tablespoons melted butter
  • 0.25 teaspoon salt
  • 0.125 teaspoon garlic powder
  • 2 tablespoons chopped fennel greens
Instructions:
  • Preheat your oven to 400°F (200°C) for optimal cooking temperature.
  • Mix together carrots, onion, and olive oil in a bowl until evenly coated, then spread them out on a baking sheet.
  • Roast in the preheated oven until the carrots are perfectly tender, approximately 30 minutes. Then transfer to a serving bowl.
  • Combine honey, butter, lemon zest, salt, pepper, and garlic powder in a small bowl and whisk together. Pour over carrots and onions in a bowl, toss to coat, then add fennel fronds and mix well.
