Roasted chicken breast with lemony Bombay potatoes

Indulge in a simple and delicious roast for a solo meal anytime.
Ingredients:
  • 200 g potatoes
  • ¼ teaspoon ground turmeric
  • ½ teaspoon ground cumin
  • 1 lemon
  • a few sprigs of fresh coriander
  • ½ red pepper
  • 2 cm piece of ginger
  • 1 free-range chicken breast
  • olive oil
Instructions:
  • Preheat the oven to 200°C/400°F/gas 6. Peel and chop the potato into 2.5cm cubes and boil for 6 minutes. Drain and let them steam dry. In a bowl, combine turmeric, cumin, half of the lemon zest, chopped coriander leaves, chopped pepper, and matchstick ginger. Add lemon juice and mix. Toss in the potatoes and chicken, drizzle with oil, and season with salt and pepper. Transfer the mixture to a baking dish, layer with lemon slices, and place the chicken on top. Drizzle with more oil and bake for 25 minutes until golden and cooked.
