Flavorful whole chicken infused with exciting and subtle flavors.
Ingredients:
  • 2 tablespoons smoked paprika
  • 1 tablespoon chili powder
  • 7.5 teaspoons curry powder
  • 4.5 teaspoons onion powder
  • 1.25 teaspoons salt
  • 1 teaspoon garlic powder
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon rubbed sage
  • 1 pinch ground ginger
  • 2 tablespoons fresh lemon juice
  • 0.5 cup chicken broth
  • 0.25 cup vegetable oil
  • 1 (2 1/2 pound) whole chicken, rinsed and patted dry
  • 1 cup chicken broth
  • 3 cups water
  • 2 tablespoons butter
  • 2.25 cups dry couscous
  • 1 tablespoon curry powder
  • 2 teaspoons onion powder
  • 2 teaspoons smoked paprika
  • 0.5 teaspoon rubbed sage
  • 0.25 teaspoon garlic powder
  • 1 bay leaf
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • In a small bowl, combine smoked paprika, chili powder, curry powder, onion powder, salt, garlic powder, black pepper, sage, and ginger. Add lemon juice, chicken broth, and vegetable oil. Stir well until a paste forms.
  • Spread the paste inside the chicken cavity and massage the rest all over the chicken, making sure to get under the skin. Truss the chicken if preferred and place it on a roasting pan.
  • Roast the chicken in a preheated oven until it is fully cooked and the juices run clear, approximately 90 minutes. Make sure the chicken reaches an internal temperature of at least 165°F (75°C) when using a meat thermometer.
  • While the chicken roasts, bring chicken broth, water, lemon juice, and butter to a boil in a large saucepan. In a large bowl, mix couscous, curry powder, onion powder, paprika, sage, garlic powder, and a bay leaf. Stir the couscous mixture into the boiling liquid and cook for 3 minutes. Remove from heat, cover, and let it stay warm until serving your chicken.
