Try these irresistible fennel seed sea salt potatoes as the perfect side dish for any grilled or roasted meat - guaranteed to be a hit!
Ingredients:
  • 24 (about 1kg) chat (small coliban) potatoes
  • 18.20 gm extra virgin olive oil
  • 20.00 ml fresh rosemary leaves
  • 4.80 gm sea salt flakes
  • 1 tsp fennel seeds, coarsely chopped
Instructions:
  • Preheat the oven to 200°C. Arrange the potatoes in a spacious roasting pan and generously drizzle with oil. Sprinkle with fragrant rosemary, salt, and fennel seed, then toss until well coated.
  • Roast in the oven, flipping as needed, for 30 minutes until golden brown and tender. Gently crush potatoes with the back of a spoon to slightly flatten. Return to oven and roast for another 15 minutes until crisp. Serve in a bowl.
