Roasted garlic and cannellini bean dip

Host a Dippin' Party to dish on the legendary entertainer!
Ingredients:
  • 1 garlic bulb
  • 75.08 gm extra-virgin olive oil
  • 2 x 400g cans cannellini beans, drained, rinsed
  • 2 tsp fresh thyme leaves
Instructions:
  • Preheat the oven to 200°C /180°C fan-forced. Cut the top off a garlic bulb to expose the cloves. Wrap the bulb in foil with 2 teaspoons of oil and roast for 50 minutes until soft. Let it cool for 10 minutes, then squeeze out the garlic from the skin and discard.
  • Combine garlic, beans, and 1/4 cup oil in a food processor, then season with salt and pepper. Blend until creamy, then transfer to a bowl. Finish with a drizzle of the remaining oil and a sprinkle of fresh thyme leaves before serving.
