Roasted Lemon Pasta

Roasted lemons elevate this pasta sauce with garlic and basil to unforgettable levels.
Ingredients:
  • 2 large lemons
  • 1 (16 ounce) package whole wheat penne
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons finely chopped fresh basil
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Heat the oven to 400°F (200°C).
  • Encase the lemons in shiny aluminum foil.
  • Roast the lemons in the preheated oven until tender, approximately 30 minutes.
  • While the lemons are roasting, boil a large pot of lightly salted water. Add penne and cook until al dente, about 11 minutes. Drain pasta and set aside.
  • Take the fragrant, roasted lemons out of the oven and allow them to cool for a bit. Without delay, take off the foil, cut each lemon in half, and extract the roasted lemon pulp by squeezing it into a bowl.
  • In a large skillet, warm up the oil. Sauté garlic until fragrant, around 1 minute. Stir in lemon pulp and cook for 2 to 3 minutes. Mix in cooked pasta, basil, salt, and pepper, ensuring everything is well combined. Serve while hot.
