Lemon roasted potatoes, brimming with tangy goodness, a must-have side dish!
Ingredients:
  • 4 large russet potatoes
  • 0.25 teaspoon cayenne pepper, or to taste
  • kosher salt to taste
  • 0.25 cup olive oil, or more to taste
  • 1 cup chicken broth
  • 3 tablespoons fresh lemon juice, or to taste
  • 2 teaspoons lemon zest
  • 4 sprigs fresh oregano leaves, or more to taste
Instructions:
  • Preheat the oven to 400°F (204°C) for the perfect cooking temperature.
  • Prepare the russet potatoes by trimming the long edges to make them lay flat, cutting them in half lengthwise, and rinsing them in a bowl of cold water to remove excess starch. Pat dry on paper towels and generously season with black pepper, cayenne, and salt.
  • Drizzle the olive oil on the bottom of a large baking dish. Place the potatoes with the seasoned side down in the dish. Brush the tops with additional olive oil and sprinkle with pepper, cayenne, and salt.
  • Place in the preheated oven for 20 minutes. Flip the potatoes carefully and allow to rest for 10 minutes before serving.
  • In a bowl, mix together broth with lemon zest and juice. Pour this flavorful mixture over the potatoes. Gently scrape any zest off the potatoes into the broth. Place oregano sprigs in between the potatoes for added aroma. Season everything with a sprinkle of pepper. Give the dish a light shake to evenly distribute the sauce.
  • Place the potatoes back in the oven and roast for an additional 15 minutes. Continue roasting until they are irresistibly soft on the inside and beautifully crusty on the outside, about 10 to 15 minutes longer. Finally, flip the potatoes once more for serving and enhance with a drizzle of olive oil, a sprinkle of pepper, and more fragrant oregano.
