Ingredients:
  • 1 (3 pound) bone-in pork shoulder roast
  • 2 teaspoons minced garlic
  • kosher salt and ground black pepper to taste
  • 2 pomegranates with the seeds removed
  • 0.5 cup water
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons turbinado sugar
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C). Season the pork roast generously with garlic, kosher salt, and pepper, then transfer it to a roasting pan.
  • Roast the meat for an hour in the preheated oven. Meanwhile, in a large saucepan, simmer pomegranate seeds and water until they break down and release their juices. Strain to extract about 3/4 cup of juice.
  • Transfer the fresh pomegranate juice into a saucepan and bring it to a vigorous boil. Let it simmer on medium heat until the liquid reduces by half. Take it off the heat and combine with balsamic vinegar, sugar, and cinnamon.
  • Once the roast has cooked in the oven for 45 minutes, generously brush it with flavorful pomegranate sauce on the top and sides. Continue roasting the pork, remembering to baste every 10 minutes, until it reaches an internal temperature of 180 degrees F (80 degrees C), which should take about 30 minutes. Remove it from the oven, cover loosely with foil, and let it rest for 20 minutes before carving and serving.
