Roasted potatoes with pancetta and sage

Ingredients:
  • 18 medium desiree or chat potatoes
  • 18 slices mild pancetta
  • 18 large sage leaves
  • olive oil cooking spray
Instructions:
  • Preheat the oven to 200°C and line a baking tray with parchment paper. Use an apple corer to remove the center of each potato. Place a slice of pancetta on a flat surface and top it with a sage leaf.
  • Take a piece of pancetta and wrap a sage leaf inside. Thread it through the center of a potato and place on a baking tray. Repeat with the remaining potatoes. Spray them with olive oil, sprinkle sea salt flakes, and bake for 45-55 minutes until golden and crisp. Serve and enjoy.
