Roasted pumpkin, sage and couscous fritters

Family-favorite vegetarian pumpkin, sage, and couscous fritters.
Ingredients:
  • 1 egg
  • Lemon wedges, to serve
  • 850g pumpkin, peeled, seeded, cut into 3cm pieces
  • 2 garlic cloves, thinly sliced
  • 40.00 ml sage leaves, torn
  • 28.60 gm honey
  • 56.88 gm olive oil
  • 250.00 ml CousCous
  • 82.50 ml pine nuts, toasted
  • 75g feta cheese, crumbled
  • 250.00 ml Greek-style yoghurt
  • 1 garlic clove, crushed
  • 21.00 gm lemon juice
Instructions:
  • Preheat the oven to 220C (or 200C fan-forced). In a large bowl, combine pumpkin, garlic, sage, honey, and 1 tablespoon of oil. Season with salt and pepper, then toss to coat evenly. Spread the mixture in a single layer on a baking tray lined with parchment paper. Roast for 30 minutes. Mash the roasted pumpkin coarsely using a potato masher or fork. Allow it to cool.
  • Place couscous in a large heatproof bowl and pour in 1 cup of boiling water. Stir with a fork until liquid is absorbed. Cover and let stand for 3 minutes. Fluff couscous with a fork to separate the grains, then cover and stand for an additional 2 minutes. Fluff again and set aside to cool.
  • In a large bowl, mix together the pumpkin mixture, couscous, pine nuts, feta, and egg. Season to taste.
  • Shape pumpkin mixture into patties using 1/4 cup measures.
  • In a non-stick frying pan on medium heat, heat a bit of the reserved oil. Cook fritters in batches, adding more oil as needed. Use a spatula to gently flatten the fritters and cook for 3-4 minutes on each side until golden brown.
  • While you wait, prepare the sauce by mixing all the ingredients in a small bowl and seasoning to taste.
  • Garnish with lemon wedges and a side of garlic yogurt sauce.
