Impressive roasted pumpkin and goat cheese crostini - flavorful appetizer that wows guests.
Ingredients:
  • 2 cups diced raw pumpkin
  • 2 tablespoons extra-virgin olive oil, divided
  • 2 teaspoons chopped fresh sage
  • 1 leek, white and light green parts only, thinly sliced
  • 1 French baguette
  • 1 clove garlic
  • 1 (4 ounce) log goat cheese, at room temperature
  • 1 tablespoon balsamic glaze
Instructions:
  • Heat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  • Spread the diced pumpkin on the baking sheet. Drizzle with 1 tablespoon of oil and gently toss to coat. Evenly spread out the pumpkin and sprinkle with sage, salt, and pepper.
  • Roast in the warm oven until soft, approximately 20 minutes.
  • In a medium frying pan over medium heat, melt butter. Cook leek until softened and starting to caramelize, about 5 to 7 minutes. Stir in the roasted pumpkin from the oven until well combined.
  • Get your outdoor grill sizzling hot and give the grate a light coating of oil.
  • Cut the baguette on a diagonal into 1/2-inch slices and brush one side of each slice with the remaining oil.
  • Grill over high heat until beautifully golden, approximately 1 1/2 minutes on each side.
  • Once grilled, enhance the baguette slices by rubbing the oiled side with the garlic clove several times. Spread each slice with rich goat cheese, add pumpkin-leek mix, drizzle lightly with balsamic glaze, and serve promptly.
