Roasted pumpkin and parsnip with sweet garlic and crispy sage

Heart-healthy, gluten free, fiber-rich baked pumpkin side dish.
Ingredients:
  • 1 garlic bulb, halved crossways
  • 1kg kent pumpkin, cut into 8 wedges (unpeeled)
  • 4 parsnips, peeled, halved lengthways
  • 56.88 gm extra virgin olive oil
  • 1 bunch fresh sage
  • 40.00 ml pepitas
  • 16.00 gm brown sugar
Instructions:
  • Preheat your oven to 200C (180C fan-forced) and prepare 2 large baking trays by lining them with baking paper.
  • Spread out the garlic, pumpkin, and parsnip on baking trays. Drizzle with oil and season with salt and pepper. Roast in the oven for 20 minutes.
  • In a bowl, mix together sage, pepitas, and sugar.
  • Generously dust the sage mixture over the vibrant vegetables. Roast for 10 minutes, or until they turn a glorious golden hue and reach a perfect tenderness. Delicately transfer the vegetables to a welcoming platter and serve with pride.
