Elevate your Christmas roast with this irresistible side dish.
Ingredients:
  • 1 eggplant, trimmed, cut into 3cm pieces
  • 2 zucchini, trimmed, cut into 3cm pieces
  • 2 red capsicums, seeded, coarsely chopped
  • 1 red onion, coarsely chopped
  • 2 garlic cloves, thinly sliced
  • 36.40 gm olive oil
  • 250g cherry tomatoes
  • 250g yellow cherry tomatoes
Instructions:
  • Preheat your oven to 200°C. Combine eggplant, zucchini, capsicum, onion, and garlic in a generous roasting pan. Drizzle with oil and season with salt and pepper, then roast for 30 minutes or until veggies are tender, flipping occasionally.
  • Arrange the cherry tomatoes over the vegetables and return to oven for an additional 10 minutes, or until tomatoes start to release their juices.
  • Serve ratatouille straight from the pot into a beautiful serving dish. Enjoy right away!
