Create a cozy winter soup by boiling fresh sweet potatoes.
Ingredients:
  • 850g orange sweet potato, peeled, cut into 3cm pieces
  • 1 medium brown onion, cut into wedges
  • 2 garlic cloves, peeled
  • 54.00 gm maple syrup
  • 1020.00 gm chicken style liquid stock
  • 252.50 gm pure cream
  • 20.00 ml chopped fresh oregano leaves
  • Salt, to season
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Combine potato, onion, and garlic in a large roasting pan. Drizzle with oil and maple syrup, then mix well to coat. Season with salt and pepper. Roast for 25-30 minutes until golden and tender.
  • Transfer the seasoned potato mixture into a generously sized saucepan. Pour in the stock and bring it to a vigorous boil over medium-high heat. Lower the heat to medium-low and gently simmer for about 5 minutes until the mixture is thoroughly heated. Take it off the heat and let it rest for 5 minutes to cool slightly before serving.
  • Puree soup in batches until velvety. Warm through in a pan over low heat. Gently mix in 3/4 cup cream. Stir continuously for 2 minutes until hot. Serve in bowls, drizzle with the remaining cream, and sprinkle with fragrant oregano.
