Roasted tomato ciabatta

Versatile and delicious - perfect for any meal or snack!
Ingredients:
  • 400g grape tomatoes
  • 6 garlic cloves, unpeeled
  • 2 tsp white balsamic vinegar
  • 56.88 gm extra virgin olive oil
  • 1/2 x 300g ciabatta loaf
  • 62.50 ml fresh basil leaves
  • 40.00 ml shaved parmesan (see notes)
Instructions:
  • Preheat the oven to 200C/180C fan-forced and line 2 baking trays with baking paper.
  • Arrange the tomatoes and garlic on a prepared tray, then drizzle them with vinegar and 1 tablespoon of oil. Season with your favorite spices. Roast in the oven for 20 minutes, or until the tomatoes are tender and their skins are starting to split. Let them cool for 5 minutes before serving.
  • Cut the bread in half horizontally, then slice each half into 4 fingers. Arrange them on the prepared tray with the cut side facing up. Squeeze the garlic from the skins and mash it with a fork until smooth. Spread the garlic over the cut sides of the bread, then drizzle with the remaining oil. Bake for 10 minutes until the bread is lightly toasted.
  • Transfer the tomatoes into a bowl, then mix in the basil and parmesan, ensuring everything is well combined. Spoon the tomato mixture on top of the bread and serve.
