Succulent roasted chicken with savory vegetables, perfect for cozy nights or anytime.
Ingredients:
  • 1 (4 pound) whole chicken
  • salt and pepper to taste
  • 6 whole onions
  • 6 potatoes, peeled
  • 4 carrots, cut into 2 inch pieces
  • 4 stalks celery, chopped
Instructions:
  • Preheat the oven to 325°F (165°C) for a perfectly balanced cooking environment.
  • Season the chicken generously with salt and pepper, then nestle it into a large roasting pan. Surround the chicken with onions, potatoes, carrots, and celery. Pour water into the pan and cover tightly with aluminum foil before roasting.
  • Roast the chicken in the preheated oven, basting occasionally, until golden brown, for about 2 hours. Remove aluminum foil during the last 30 minutes of cooking. Check for doneness by inserting an instant-read thermometer into a thigh, which should read at least 165 degrees F (74 degrees C). Rest the chicken for 10 minutes before carving.
