Award-winning spicy, creamy grits steal the show at family barbeques, leaving everyone craving more.
Ingredients:
  • 0.5 onion, chopped
  • 2 cups chicken broth
  • 1 cup quick-cooking grits
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon ground cumin
  • 4 chipotle peppers in adobo sauce, minced
  • 1 (4 ounce) can chopped green chilies
  • 1.5 cups shredded sharp Cheddar cheese, divided
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a 9x13 inch baking dish.
  • In a saucepan over medium heat, saute the onion in olive oil until soft and translucent, about 5 minutes. Add the chicken broth and milk, bring to a boil, then reduce heat. Gradually whisk in the grits, cover, and cook for 5 minutes.
  • After the grits are cooked, mix in salt, pepper, cumin, chipotle peppers, green chiles, and 1 cup of Cheddar cheese until melted. Transfer the grits to the 9x13 inch dish and top with the remaining 1/2 cup of Cheddar cheese.
  • Bake until the cheese is bubbly and slightly browned, 30-45 minutes in the preheated oven.
