Butter cookie walnut nests filled with homemade fondant eggs.
Ingredients:
  • 1 cup butter, softened
  • 0.5 cup firmly packed brown sugar
  • 2 eggs, separated
  • 1.5 teaspoons vanilla extract
  • 2.25 cups all-purpose flour
  • 1.5 cups walnuts, finely chopped
  • 2 tablespoons butter, softened
  • 3 tablespoons light corn syrup
  • 2 drops blue food coloring
  • 1 drop green food coloring
  • 1 teaspoon almond extract
  • 2 cups confectioners' sugar
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Cream the butter and brown sugar in a large bowl until light and fluffy. Add the egg yolks and mix, then stir in the vanilla. Add the flour and mix until combined.
  • Beat foamy egg whites in a shallow dish and spread walnuts on a plate or waxed paper.
  • Form a teaspoon of dough into a ball, coat it with egg whites and walnuts, then arrange them 2 inches apart on a cookie sheet. Create a depression in each ball using your thumb.
  • Place in the perfectly heated oven for 12 minutes.
  • In a separate bowl, mix together the remaining 2 tablespoons of butter, corn syrup, blue and green food coloring, and almond extract until creamy. Slowly add the confectioners' sugar. Roll 1/2 teaspoon of the fondant mixture into small egg shapes and place them into the hollows of the baked cookies. Enjoy!
