Simmered Carrot and Sweet Potato Soup with Ginger: A creamy, flavorful delight.
Ingredients:
  • 1 tablespoon bacon grease
  • 1.5 cups roughly chopped carrots
  • 0.5 medium onion, diced
  • 3 sprigs fresh thyme, leaves stripped, divided
  • 2 cups chicken stock, or more if needed
  • 1 cup roughly chopped sweet potato
  • 2 tablespoons ginger paste
  • 1 tablespoon orange juice, or to taste
  • 1 tablespoon brown sugar
  • 0.5 teaspoon red pepper flakes
  • 1 pinch ground cinnamon
  • 2 tablespoons half-and-half
Instructions:
  • In a large pot over medium heat, sizzle butter and bacon grease. Add carrots and onion; sauté until carrots are tender and onion is see-through, about 5 to 10 minutes. Season with salt and pepper. Fold in half of the thyme leaves, cook until aromatic for 10 to 15 seconds.
  • Combine stock, sweet potato, ginger paste, and the remaining thyme in a pot and bring to a boil. Reduce heat and simmer until the sweet potato is soft, about 15 to 20 minutes. Stir in orange juice, brown sugar, pepper flakes, and cinnamon.
  • Blend soup with an immersion blender until velvety, adding extra stock as needed for desired thickness. Swirl in half-and-half and dish up.
