Rockin' Good Smashed Cauliflower with Garlic

Delicious low-carb cauliflower mash with Parmesan, garlic, chives. Perfect pairing for beef.
Ingredients:
  • 1 (16 ounce) package frozen cauliflower
  • 4 cloves garlic, peeled
  • 3 tablespoons butter
  • 2 tablespoons chopped fresh chives or more to taste
  • 3 tablespoons light cream
  • 2 tablespoons grated Parmesan-Reggiano cheese
  • salt and ground black pepper to taste
Instructions:
  • Set up a steamer by putting water in a saucepan and bringing it to a boil. Steam the cauliflower and garlic in the steamer insert until soft, for about 10 to 15 minutes.
  • Take out garlic cloves and mash them with a fork. Place the smashed garlic and cauliflower in a pot. Mash in butter and chives until smooth. Stir in light cream. Sprinkle cheese on top and season with salt and pepper.
  • Simmer the cauliflower mixture gently to soak up the cream and butter until the mixture is creamy, approximately 12 minutes.
