Elevate your BBQ with Chef John's tangy vinegar and peppery blend inspired by Rodney Scott's Eastern Carolina sauce.
Ingredients:
  • 2 cups distilled white vinegar
  • 3 thin slices lemon, seeded
  • 1 tablespoon freshly ground black pepper
  • 1.5 teaspoons cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground ancho chile pepper
  • 1 teaspoon dried red pepper flakes
  • 0.25 teaspoon ground white pepper
  • 0.25 cup white sugar
Instructions:
  • Prepare all your ingredients.
  • Combine white vinegar, lemon slices, black pepper, cayenne, paprika, ancho chile powder, pepper flakes, and white pepper in a saucepan. Mix in sugar and whisk everything together.
  • Bring to a gentle simmer over medium-high heat. Stir well, then allow to cool to room temperature.
  • Pour the mixture into a plastic squeeze bottle or container of your choice.
