Mennonite-inspired deep-fried pastry fritters paired with refreshing watermelon slices; perfect for picnics or hot summer days.
Ingredients:
  • 3 eggs
  • 1.5 cups all-purpose flour
  • 1 teaspoon salt
  • 2 cups canola oil for frying
Instructions:
  • In a large mixing bowl, whisk eggs until frothy. Gradually mix in flour and salt to form a soft dough. Roll out the dough to about 1/8 inch thickness. Cut into 2 inch by 5 inch strips. Make a slit down the center of each strip, then twist to create a loop by sliding one end through the slit.
  • In a deep skillet or deep-fat fryer, heat 1 1/2 inches of oil over medium-high heat to 375 degrees F (190 degrees C).
  • Fry small portions of dough in hot oil until golden brown. Place on paper towels to soak up excess oil. Enjoy warm or at room temperature.
