Delicious mini taco bites with seasoned beef, Cheddar cheese, sour cream, and diced tomato. Easy appetizer for any spontaneous party!
Ingredients:
  • 1 pound ground beef
  • 0.75 cup water
  • 1 (1 ounce) packet taco seasoning
  • 1 (10 ounce) bag scoop-shaped tortilla chips
  • 1 (8 ounce) package shredded Cheddar cheese
  • 1 (8 ounce) container sour cream, or more to taste
  • 1 large tomato, diced
Instructions:
  • Preheat a large skillet over medium-high heat. Brown the ground beef in the hot skillet, stirring occasionally, until cooked through and crumbly, about 5-7 minutes. Remove the beef from the skillet and drain on a paper towel-lined plate. Discard any excess grease from the skillet.
  • In a skillet, bring water and taco seasoning mix to a boil. Simmer on low heat for 5 minutes, stirring occasionally. Mix in cooked beef and refried beans thoroughly. Season with salt and pepper to taste.
  • Arrange tortilla scoops on individual plates. Fill each scoop to the top with a small amount of beef mixture. Top with Cheddar cheese, diced tomato, and sour cream.
