Mexican-inspired chuck roast cooked low and slow until tender, then shredded and served in warm tortillas. Freezes perfectly for convenient leftovers.
Ingredients:
4pounds chuck roast
1 (4 ounce) cangreen chile peppers, chopped
2tablespoons chili powder
0.5 teaspoondried oregano
0.5 teaspoonground cumin
2clovesgarlic, minced
salt to taste
Instructions:
Preheat the oven to 300°F (150°C) for the perfect cooking temperature.
Lay the roast on a generous piece of foil. In a small bowl, blend green chile peppers, chili powder, oregano, cumin, garlic, and salt to taste. Thoroughly coat the meat with this flavorful mixture.
Completely encase the meat in foil and place it in a roasting pan.
Roast at 300 degrees F (150 degrees C) for 3 1/2 to 4 hours until it's fork-tender. Shred the roast using two forks after removing from the oven.
