Mexican-inspired chuck roast cooked low and slow until tender, then shredded and served in warm tortillas. Freezes perfectly for convenient leftovers.
Ingredients:
  • 4 pounds chuck roast
  • 1 (4 ounce) can green chile peppers, chopped
  • 2 tablespoons chili powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • 2 cloves garlic, minced
  • salt to taste
Instructions:
  • Preheat the oven to 300°F (150°C) for the perfect cooking temperature.
  • Lay the roast on a generous piece of foil. In a small bowl, blend green chile peppers, chili powder, oregano, cumin, garlic, and salt to taste. Thoroughly coat the meat with this flavorful mixture.
  • Completely encase the meat in foil and place it in a roasting pan.
  • Roast at 300 degrees F (150 degrees C) for 3 1/2 to 4 hours until it's fork-tender. Shred the roast using two forks after removing from the oven.
