Rooibos-infused poached pears for a twist on a classic dessert.
Ingredients:
  • 220g caster sugar
  • 2 rooibos tea bags (see notes)
  • 4 beurre bosc pears, peeled, cored
  • Vanilla ice cream, to serve
Instructions:
  • In a saucepan over medium heat, infuse sugar, tea, and 1.5L (6 cups) water. Bring to a boil, then let sit for 10 minutes to enhance the flavors.
  • Remove the tea bags and place the pan back on medium heat. Once it comes to a boil, add the pears and cover with parchment paper. Cook for 15-20 minutes until the pears are tender.
  • Take out the pears from the pan. Continue to cook the liquid for an additional 10 minutes, or until it thickens into a syrup.
  • Top succulent pears with delightful syrup and a scoop of velvety ice cream.
