Creamy fruit salad with a modern touch using Rosa Marina pasta.
Ingredients:
1 (16 ounce) packageRosa Marina (orzo) pasta
2 (15 ounce) cansmandarin oranges, drained and juice reserved
1 (16 ounce) canpineapple chunks, drained with juice reserved
1 (16 ounce) cancrushed pineapple, drained and juice reserved
1 (4 ounce) jarmaraschino cherries, drained and halved
0.75 cupwhite sugar
3tablespoons all-purpose flour
1 (16 ounce) container whipped topping (such as Cool Whip®)
Instructions:
1. In a large pot, bring salted water to a lively boil. Cook orzo until al dente, stirring occasionally, for approximately 11 minutes. Drain and transfer to a spacious bowl. Mix in mandarin oranges, pineapple chunks, crushed pineapple, and maraschino cherries.
In a saucepan, gently mix the juices from mandarin oranges, pineapple chunks, and crushed pineapple with sugar, eggs, and flour. Cook on low heat, stirring regularly, until the sauce thickens, which should take 5 to 7 minutes. Once thickened, remove from heat and let it cool for about 30 minutes before using.
Drizzle the chilled sauce over the orzo mixture and mix well. Chill for at least 8 hours, ideally overnight, for the flavors to meld. Gently fold in the whipped topping just before serving.
