Rose’s spanakopita spinach pie recipe

Christina and Yia Yia Rose demonstrate how to create a delicious Greek spanakopita spinach pie at the Festival of Dinners.
Ingredients:
  • 1 bunch silverbeet (spinach), chopped
  • 4 sprigs spring onions, finely chopped
  • 20.00 ml parsley (optional)
  • 300g fetta cheese, crumbled
  • 500g ricotta cheese, crumbled
  • 40.00 ml dried oregano flakes
  • Salt & Pepper, to season
  • Homemade filo pastry
Instructions:
  • Combine all ingredients in a large bowl and mix thoroughly.
  • Dust a flat surface with flour. Roll out homemade filo dough thinly with a wooden pin, then carefully transfer and layer onto a lightly oiled baking pan.
  • Spread all the filling evenly over one sheet of homemade filo in the pan, then top with another sheet of filo.
  • Carefully score the top layer of the filo dough with a sharp knife to create diamond shapes, ensuring not to pierce through the bottom layer.
  • Bake at 180°C until golden brown, about 30-40 minutes.
  • Enjoy this dish alongside a refreshing Greek salad or simply by itself.
