Ingredients:
  • 1000.00 ml rosellas
  • 1000.00 gm water
  • 900.00 gm sugar
Instructions:
  • Rinse the rosellas in water, separating the red fleshy calyx and pods.
  • Place the pods in a saucepan and cover with water. Boil until soft, then strain, and set aside the liquid.
  • In a separate saucepan, pour enough liquid from the pods to cover the red calyx.
  • Simmer the softened mixture over heat, measure the volume, and add an equal amount of sugar. Return to heat, simmer while stirring occasionally for 15 to 20 minutes. Remove, cool slightly, and bottle in sterilized jars.
