Versatile berry compote - perfect with ice cream, pudding, cake, or whipped cream!
Ingredients:
  • 6 cups raspberries
  • 2 tablespoons cornstarch
  • 0.25 cup cold water
  • 1 tablespoon fresh lemon juice
Instructions:
  • In a non-stick saucepan over medium heat, let the berries and sugar mingle until they bubble up, stirring constantly.
  • Combine cornstarch with cold water until fully dissolved; mix into the berries. Simmer over medium-low heat until thickened, about 3 minutes.
  • Take the berry mixture off the heat. Mix in lemon juice and vanilla extract, then move the mixture to a bowl. Cover the bowl with plastic wrap and refrigerate for 24 hours.
