Ingredients:
  • 100ml milk
  • 50g unsalted butter, melted
  • 1 egg, lightly beaten
  • 375g plain flour
  • 10.00 gm caster sugar
  • Canola oil spray
Instructions:
  • In a large jug, combine milk, butter, egg, and 100ml water, and mix thoroughly. In a bowl, combine flour, sugar, and 2 teaspoons of table salt, then make a well in the center. Pour the liquid mixture into the well and stir until a sticky dough forms. Knead the dough on a heavily floured surface with floured hands until soft and smooth. Cover and let it stand for 20 minutes.
  • Cut dough into 16 equal pieces and lightly coat with oil. Lightly oil a marble slab or flat work surface. Take one piece of dough at a time and use oiled hands to flatten it on the oiled surface, stretching it out to approximately 15cm wide and 2-5mm thick by pulling at the edges.
  • Preheat a large crepe pan or barbecue hotplate over medium-high heat. Cook each roti, pressing down while it bubbles, until golden and slightly charred, about 1 minute on each side.
