Rougemont Applesauce Cake

Moist cake with applesauce for easy frosting.
Ingredients:
  • 1.75 cups pastry flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup shortening
  • 1 cup packed brown sugar
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 1 cup applesauce
Instructions:
  • Preheat your oven to 350°F (175°C). Grease a 9-inch square cake pan and either line the bottom with wax paper or lightly dust with flour.
  • Combine the flour, baking powder, salt, and spices.
  • Cream the shortening in a large bowl until smooth. Add brown sugar and beat until creamy. Mix in eggs and vanilla. Gradually add the flour mixture and applesauce in alternating additions, stirring lightly after each. Transfer the batter to the prepared pan.
  • Bake until cake springs back when lightly touched, about 40-45 minutes.
