Delicious bran muffins bursting with flavors of apple, banana, honey, and juicy raisins.
Ingredients:
  • 0.5 cup raisins
  • 0.75 cup milk
  • 1.5 cups bran cereal (such as Kellogg's All-Bran® Original Cereal)
  • 1 cup whole wheat flour
  • 2 tablespoons melted butter
  • 1 apple, cored and shredded
  • 1 ripe banana, mashed
  • 0.5 cup honey
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare 12 muffin cups either by greasing them or lining with paper cupcake liners.
  • Place the raisins in a microwave-safe bowl and cover them with water. Microwave on High for 1 minute to plump them up. Drain and set aside.
  • In a bowl, whisk together eggs and milk, then stir in bran cereal. Allow mixture to sit for 5 minutes for the cereal to absorb the liquid. Carefully fold in plumped raisins, flour, baking soda, cinnamon, melted butter, shredded apple, mashed banana, and honey; gently combine until well mixed.
  • Divide the batter evenly among the muffin cups. Bake in the preheated oven for around 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
