Make year-round s'mores cookies with graham crackers, marshmallows, and chocolate.
Ingredients:
  • 1 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 1/3 cups all-purpose flour
  • 1 cup finely ground graham cracker crumbs (16 cracker squares)
  • 1/8 teaspoon salt
  • 120 miniature marshmallows (about 1 1/4 cups)
  • 60 rectangles milk chocolate (from four 1.55-oz bars)
Instructions:
  • Preheat oven to 325°F.
  • In a large bowl, use an electric mixer to beat together butter and brown sugar until light and fluffy. Mix in egg and vanilla until well combined. Gradually add flour, cracker crumbs, and salt, then beat on low speed for about 1 minute until a stiff dough forms.
  • Take heaping teaspoonfuls of dough and shape them into 60 small balls. Place the balls on ungreased cookie sheets, ensuring they are 2 inches apart. Use your thumb to make an indentation in the center of each ball.
  • Bake the cookies for 10 to 12 minutes until firm with slightly browned edges. Press 2 marshmallows into the center of each cookie and bake for an additional 2 to 3 minutes. Top each marshmallow with a rectangle of chocolate and allow to sit for 2 to 3 minutes. Use a knife to gently spread the chocolate over the marshmallows, then let it set before serving.
