S'mores Pieces Cheesecake

Indulge in decadent S'mores Cheesecake Brownies without the need for a campfire.
Ingredients:
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 0.25 cup butter or margarine, melted
  • 6 tablespoons butter or margarine, melted
  • 1.25 cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 0.33333334326744 cup HERSHEY'S® Cocoa Powder
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 3 (8 ounce) packages cream cheese, softened
  • 0.75 cup sugar
  • 1 tablespoon vanilla extract
  • 1 (7 ounce) package HERSHEY'S® S'mores Baking Pieces, divided
  • 3 tablespoons heavy cream, divided
Instructions:
  • Preheat oven to 350 degrees F. Grease the sides of a 9-inch springform pan and securely wrap the outside of the pan with foil, ensuring it extends at least 2 inches up the sides of the pan.
  • For the crumb crust, preheat the oven to 350°F. Combine 1 cup graham cracker crumbs with 2 tablespoons sugar. Stir in 1/4 cup melted butter until well mixed. Press the mixture into the bottom and halfway up the sides of a 9-inch springform pan. Bake for 8 to 10 minutes, then allow to cool.
  • For the brownie layer, mix 6 tablespoons of melted butter or margarine with 1-1/4 cups of sugar and 1 teaspoon of vanilla extract. Incorporate 2 eggs until well combined. Add 1 cup plus 2 tablespoons of all-purpose flour, 1/3 cup of HERSHEY'S Cocoa, 1/2 teaspoon of baking powder, and 1/2 teaspoon of salt; stir until smooth. Spread the batter evenly in the prepared pan.
  • Bake until brownie edges pull away from pan; prepare cheesecake batter while waiting.
  • In a large bowl, whisk together cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  • After taking out the brownie layer from the oven, generously spoon the velvety cheesecake mixture over it. Carefully place the cheesecake in a water bath and place it back in the oven. Let it bake for 45 to 50 minutes until the center is perfectly set. Take it out of the water bath and allow it to cool on a wire rack. Gently run a knife along the side of the pan to loosen the cake, then cool it to room temperature before removing the sides of the pan.
  • Reserved 2 tablespoons of marshmallows and 1/4 cup of chocolate chips from the s'mores baking pieces.
  • In a small microwave-safe bowl, combine 2 tablespoons of reserved marshmallows and 1 tablespoon of cream. Microwave on MEDIUM (50%) for 10 seconds, then stir. If needed, microwave in additional 5-second intervals, stirring after each, until marshmallows are melted and mixture is smooth. Spread over the cheesecake, then sprinkle the remaining s'mores mixture on top and press gently into the marshmallow mixture.
  • Combine 1/4 cup chocolate chips and 2 tablespoons cream in a microwave-safe bowl. Melt as you did for the marshmallows. Then, drizzle the mixture over the cheesecake. Cover and chill for about 2 hours or until serving time. Refrigerate any leftovers to enjoy later.
