Saffron and sage baked potatoes

Unveil the key to perfect crispy roast potatoes.
Ingredients:
  • 3kg Sebago potatoes, peeled (see note)
  • Large pinch of saffron threads
  • 60ml (1/4 cup) olive oil
  • 62.50 ml fresh sage leaves
Instructions:
  • In a large saucepan, combine the potatoes and saffron, then cover with cold water. Let it sit for 1 hour to infuse the flavors.
  • Bring to a vigorous boil, then reduce to medium-high heat. Simmer for 30 minutes until tender. Drain and return to the pot. Cook over medium-high heat for 1-2 minutes until moisture evaporates, shaking the pan occasionally.
  • 1. Preheat the oven to 180C. 2. Warm the oil in a large baking dish inside the oven for 5 minutes. 3. Add the potatoes and gently press them with a potato masher. 4. Ensure the potatoes are evenly coated with oil. 5. Sprinkle with sage and bake for 30 minutes until the potatoes are golden and crispy.
  • Season the potatoes generously with salt, then elegantly transfer them to a beautiful serving platter for a stunning presentation.
