Saffron rice with pistachio and radish

Create a delicious and inclusive side dish that caters to all dietary needs.
Ingredients:
  • 255.00 gm chicken style liquid stock
  • Pinch saffron threads (optional)
  • 40g unsalted butter
  • 1 large brown onion, finely chopped
  • 200.00 gm white long-grain rice
  • 62.50 ml pistachio kernels, chopped
  • 3 radishes, trimmed, thinly sliced
Instructions:
  • In a saucepan over medium heat, combine the stock with 1 cup of cold water. Bring to a boil, then remove from heat. Stir in saffron if desired.
  • In a saucepan over medium heat, melt the butter until it starts to sizzle. Add the onion and cook, stirring occasionally, until it turns a beautiful golden color, around 5 to 8 minutes.
  • Combine rice with the onion mixture, stirring for 3 minutes until well-coated. Pour in the stock mixture and mix well. Season with salt and pepper. Cover and bring to a boil, then simmer on low heat for 15 minutes, stirring once, until the rice is tender and liquid is absorbed. Remove from heat, let it stand covered for 5 minutes. Stir in pistachios and radish, then serve.
