Saganaki prawns

Wow your guests with affordable gourmet saganaki prawns!
Ingredients:
  • 36.40 gm olive oil
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 600g frozen small green prawns, thawed, peeled, tails intact, deveined
  • 20.00 ml chopped fresh oregano leaves
  • 20.00 ml chopped fresh flat-leaf parsley leaves
  • 250g cherry tomatoes, halved
  • 100g feta, crumbled
  • Crusty bread, to serve
Instructions:
  • 1. Preheat the grill to medium-high. Meanwhile, heat oil in a large ovenproof frying pan over medium-high heat. Add onion and cook, stirring, for 5 minutes until softened. Stir in garlic and cook for 1 minute until fragrant. Then, add prawns, oregano, and half of the parsley. Cook, stirring occasionally, for 5 minutes until prawns are pink and cooked through. Finally, add tomatoes and cook for 1 minute until just starting to collapse.
  • Sprinkle feta on top, place under grill until heated through (2-3 minutes). Finish with remaining parsley and serve with bread.
