Saharan West African Peanut and Pineapple Soup

West African-inspired peanut, tomato, and pineapple soup/stew - a flavorful and delicious combination.
Ingredients:
1cupdried pineapple pieces
1tablespooncanola oil
0.5sweet onion, chopped
1stalkcelery, chopped
1leek, chopped
1teaspooncurry powder
1teaspoonground cumin
0.25 teaspooncayenne pepper
0.75 cuppeanut butter
1 (14 ounce) candiced tomatoes
3cups water
0.25 cupmincedgreen onion
1teaspoonmincedgarlic
Instructions:
Allow the dried pineapple to soften by soaking it in a bowl of water for a minimum of 30 minutes, then drain.
In a large pot, heat oil over medium heat. Sauté sweet onion, celery, and leek until tender, about 4 minutes, stirring occasionally.
Season vegetables generously with a blend of curry powder, cumin, cayenne pepper, and salt. Stir well to ensure every piece is coated. Continue cooking and stirring until a tantalizing aroma fills the kitchen, around 4 minutes.
- Stir peanut butter into the pot. Drain half the tomato juice and discard, then pour tomatoes and remaining juice into the pot. Cook until tomatoes soften, around 5 minutes. Add 3 cups water and drained pineapple to the pot.
After bringing the mixture to a gentle boil, lower the heat to medium-low and let the soup simmer for 1 hour. Then, swirl in the cream, green onion, and garlic to enhance the flavors.
