Festive Christmas cookies made with Honey Nut Cheerios® cereal.
Ingredients:
  • 1 bag (10.5 oz) miniature marshmallows
  • 1/4 cup butter or margarine
  • 1/2 cup peanut butter
  • 1 cup white vanilla baking chips
  • 7 cups Honey Nut Cheerios™ cereal
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Creamy White Frosting
  • 3 teaspoons Betty Crocker™ red sugar
  • 2 small red gumdrops, cut crosswise into 4 rounds, then cut in half (for mouths)
  • 32 blue miniature candy-coated chocolate baking bits
  • 16 red miniature candy-coated chocolate baking bits
Instructions:
  • Prepare a 13x9-inch pan by lining it with foil, ensuring the foil extends over 2 opposite sides; then, coat the bottom and sides of the foil with cooking spray. Set aside 16 marshmallows. In a 2 1/2-quart nonstick saucepan, combine the rest of the marshmallows, butter, peanut butter, and baking chips. Heat over medium-low heat, stirring often, until the butter and marshmallows are melted and the mixture is smooth.
  • In a large bowl, combine cereal with marshmallow mixture. Use a lightly greased wooden spoon or rubber spatula to evenly mix everything together. Transfer the mixture to a pan and press it down firmly using the greased utensil or your hands (which can also be lightly greased as the mixture will be sticky). Allow it to set for 10 minutes before serving.
  • Transfer cereal mixture from pan to a cutting board. Use a large sharp knife to cut the mixture in half lengthwise into 2 rectangles. Mark one rectangle for cutting by placing toothpicks at each end of one long side, adding 3 toothpicks to the same side every 3 inches to divide into fourths. On the other long side, place a toothpick 1 1/2 inches from each end, adding 3 toothpicks to the same side every 3 inches to divide into thirds. Cut diagonally across the rectangle from toothpick to toothpick to form triangles. Press together 2 end pieces to form an eighth triangle. Repeat with the remaining rectangle.
  • Decorate each cookie by spreading frosting from the top point to cover the top 1/3 of the triangle. Place 1 marshmallow at the point and sprinkle red sugar over the frosting for the hat. Spread frosting over the lower 1/3 of the cookie for the beard and add a gumdrop piece at the top center of the beard for the mouth. Then, add 3 dots of icing to the face area to attach blue bits for the eyes and a red bit for the nose. Allow the cookies to stand for 10 minutes until the frosting sets.
