Mouthwatering Mediterranean salad with romaine lettuce, cherry tomatoes, red onion, feta cheese, and zesty lemon garlic dressing.
Ingredients:
  • 3 cloves garlic, peeled and sliced
  • 0.125 teaspoon ground black pepper
  • salt to taste
  • 2.5 cups lemon juice
  • 1 cup canola oil
  • 1 large head romaine lettuce - rinsed, dried, and torn into bite-size pieces
  • 1 pint cherry tomatoes, halved
  • 1 red onion, sliced
  • 4 ounces feta cheese, crumbled
Instructions:
  • Crush the garlic in a mortar and pestle until it forms a paste. Mix in the pepper and salt, then transfer to a jar. Add the lemon juice and canola oil, then shake thoroughly.
  • Combine the lettuce, tomatoes, and onion in a large bowl. Right before serving, sprinkle in the cheese and drizzle with the perfect amount of dressing for a delightful coating. Toss thoroughly to mix. (Extra dressing can be stored for later use.)
