Salmon, asparagus and goji berry salad

Protein-packed cracked wheat with salmon and goji berries creates a nutritious and flavorful main dish bursting with essential nutrients.
Ingredients:
  • 135g (3/4 cup) cracked wheat
  • 2 (about 200g each) skinless salmon fillets
  • 2 bunches asparagus, trimmed
  • 62.50 ml fresh mint leaves
  • 20.00 ml chopped fresh chives
  • 40.00 ml goji berries
  • 21.00 gm lemon juice
  • 9.20 gm extra virgin olive oil
  • 60g baby rocket leaves
Instructions:
  • In a large heatproof bowl, place the cracked wheat and cover with boiling water. Let it soak for 20 minutes, then drain and squeeze out excess moisture. Transfer to a large bowl.
  • Preheat a sizzling chargrill. Lightly coat the salmon and asparagus with olive oil. Grill the salmon to your preferred doneness, about 2-3 minutes per side for medium. Grill the asparagus until just tender, 1-2 minutes per side. Transfer to a plate and let cool slightly. Break the salmon into large chunks and cut the asparagus into 5cm pieces.
  • Combine the asparagus, mint, chives, goji berries, lemon rind, lemon juice, oil, and rocket with the cracked wheat in a bowl. Gently toss to mix, season to taste. Portion onto plates and place the salmon on top. Serve right away.
