Savory salmon tart with leeks - perfect for any occasion, whether entertaining or enjoying a light meal.
Ingredients:
  • 50g butter, chopped
  • 1 leek, trimmed, halved, washed, sliced
  • 40.00 ml plain flour
  • 321.88 gm milk
  • 82.50 ml grated smoked cheddar cheese
  • 415g can pink salmon, drained, flaked
  • 2 sheets frozen puff pastry, partially thawed
  • 1 egg, lightly beaten
  • salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and line a baking tray with parchment paper.
  • In a saucepan over medium heat, melt butter, then add leeks. Cook and stir for 6 to 8 minutes until softened. Add flour and cook for 1 minute. Slowly pour in milk and cook for 3 to 4 minutes until the sauce thickens. Mix in cheese and let it cool. Add salmon and stir well to combine.
  • Cut one pastry sheet into a 16cm x 24cm rectangle and the other sheet into an 18cm x 24cm rectangle. Make 12 slits in the larger rectangle, leaving a 2cm border around the edges.
  • On a prepared tray, lay down the smaller pastry sheet. Spread with the salmon mixture, making sure to leave a 3cm border. Brush the border with egg. Place the larger sheet on top. Press the edges together with a fork to seal. Brush the top with egg. Bake for 25 minutes or until golden. Serve alongside a refreshing salad.
