Elevated Russian fish pie - perfect for any occasion!
Ingredients:
  • 16 sheets filo pastry
  • Olive oil
  • 250g pkt Uncle Ben’s Express Chinese Style Rice
  • 400g pkt Stir-Fry Vegetables
  • 4 (about 200g each) skinless salmon fillets
Instructions:
  • Preheat your oven to 190°C and line a baking tray with non-stick baking paper.
  • Lay the filo sheets on a tidy work surface. Shield them with a dry tea towel first, followed by a damp tea towel to keep them moist. Brush one filo sheet with oil, layer with another filo sheet, and brush with oil. Repeat layering two more filo sheets and oil for a total of 4 layers.
  • Take a quarter of the rice and lay it in the center of the stack of filo pastry sheets. Add a quarter of the vegetables on top of the rice, followed by the salmon. Season with salt and pepper. Fold in the sides to wrap everything together. Put the parcel seam-side down on the prepared tray. Repeat this process with the remaining filo, rice, vegetables, and salmon to make a total of 4 parcels.
  • Drizzle with oil and bake until beautifully golden and crisp, around 30 minutes.
