Soy-marinated salmon with brown sugar glaze, served with rice.
Ingredients:
  • 0.25 cup soy sauce
  • 0.25 cup brown sugar
  • 2 tablespoons extra-virgin olive oil
  • 1 lemon, juiced
  • 2 teaspoons cornstarch
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 3 (4 ounce) salmon fillets
Instructions:
  • In a saucepan, simmer water, soy sauce, brown sugar, olive oil, lemon juice, cornstarch, garlic powder, and black pepper until the sauce thickens, about 5 to 10 minutes.
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and line a baking sheet with shiny aluminum foil.
  • Place the salmon fillets on the baking sheet. Brush both sides of each fillet with sauce. Fold the aluminum foil over the fillets, sealing the edges to create a packet.
  • Cook in the preheated oven until the fish easily flakes with a fork, about 12-15 minutes.
  • Boil the remaining marinade and serve it with the cooked salmon.
